Why Brisket is better for Jerky

One of the most common questions we get asked about our jerky is... How do you get it so tender and flavorful?


The answer is easy. We only use brisket. Most jerky companies use rounds due to it being a lower cost but that lower cost comes at a price and that's tough jerky that doesn't absorb the flavor well.


Brisket has a higher fat content and marbling that brings in more flavor. That fat carries flavor, giving brisket jerky a richer, beefier taste. It also makes our jerky more tender. No more chewing until your jaw hurts! Brisket also breaksdown differently during the smoking process and gives you a more satisfying bite and the marbling prevents our jerky from getting to tough or overly dried out.
